PUMPKIN CREAM WITH PROSCIUTTO AND GRAN MORAVIA

INGREDIENTS (4 servings)

– 1 kg (2 lbs) pumpkin
– 2 medium onions
– vegetable broth
– Fratelli Brazzale butter
– olive oil
– some prosciutto slices (to taste) *use grilled zucchini slices for the VEGETARIAN alternative*
– Gran Moravia shavings

One of Fall’s favorites: creamy pumpkin soup with prosciutto or zucchini slices and a sprinkle of Gran Moravia shavings. 

PREPARATION:

Dice the pumpkin, put it in a large pot, add butter and olive oil to taste. Then pour the vegetable broth and let it boil ultil the pumpkin becomes soft. Blend it all until you obtain a creamy soup. Garnish with some slices of prosciutto or, if you prefer the vegetarian alternative, with some grilled zucchini slices. Top it with a sprinkle of Gran Moravia shavings.
